I would recommend a Cotes de Provence rose to drink. Bouillabaisse is a filling meal so desserts tend to be very simple. It also depends what time of day you are serving it. If it is served mid-day then you could serve a sweet some hours later. A pastry or fruit tart would be appropriate. If you are serving later in the evening, fresh fruit presented attractively.
